The Digestive Garden: Lemon Cookies
Don't let these nut cookies' mild mannered, "Clark Kent" , appearance fool you—the bright lemony flavor leaps right out and brings joy to the taste buds—and is a delightful surprise. In short, they're Super Cookies! For a thoroughly delicious dessert, serve them with frozen banana ice cream.

Lemon Cookies Ingredients (makes 20 cookies):
1 cup almonds
1/4 cup cashews
1/4 cup walnuts, finely chopped
1/4 cup dates, finely chopped
1/4 cup raisins
5 measured tablespoons lemon juice
1 tablespoon honey
1 measured teaspoon lemon zest
1/4-1/2 teaspoon Himalayan, or Celtic salt

Directions:
Put almonds, cashews, and salt into blender and pulse until nuts are as powdery as possible.
Transfer to a bowl.
Pulse walnuts and dates in blender.
Add to bowl.
Add raisins, and mix.
Squeeze enough lemons to make 5 measured tablespoons of juice. (Any more juice will make the cookies mushy.)
Finely grate the lemon peel for the zest, or, use a lemon zester tool, and mince.
Add lemon juice, honey, and lemon zest, and mix cookie dough by hand.
Form into cookie balls, or flatten, and enjoy!

The Little Story: The Digestive Garden

Digestive Garden Rex came up with the most wonderful analogy about humans, plants and trees, and our comparative digestive systems. Trees and plants draw nourishment from the earth, while we draw nourishment from our digestive systems. Think about it—our "earth" lives inside of us!

We love this idea of a digestive garden. Without our digestion working well, we can't get all the nutrients from what we eat. This has led us to start a spring cleanse to help clear the entire digestive tract, and to nourish, cleanse, and heal the liver, gall bladder, and the kidneys too—those amazing workhorses that filter all of our blood every hour, twenty-four seven, and help to deliver nutrients to all of our cells, and clear out metabolic wastes.

Last week we went on a five day liver cleanse, using herbal products. Each morning we started with a citrus flush drink, and throughout the day, had three or four cups of detox tea with herbal tincture drops. We drank mostly juices and blended drinks, and then enjoyed a very small evening meal. Throughout the cleanse we felt light, energized, and happy.

Even with this amount of care, we know there's a lot more to be done. As a follow-up to our detox, we've signed up to listen to a one hour free presentation on Wednesday, the 24th, presented by Body Ecology, on How to Naturally Cleanse and Detoxify Your Liver and Gallbladder This Spring. We're looking forward to this talk, to learn more about what steps we can take to reach higher levels of health and well being.
